We sent a German couple to Moto's to try some of these experimental dishes and get a rare peek inside the laboratory kitchen, where chef Cantu let us in to some high-tech secrets.
The hollow popsicle balloon, frozen with nitrogen, was a big hit with the two Germans, unlike some of the other experimental dishes.
